So, I made a ranger a while ago that finished the first dungeon and like one more quest, and would like to pick the game up again. However, before I go dashing off and beat the main quest in a hurry i have a question:

Does the game end (as in, you don't get to play anymore) when you finish the main quest?

If so, to bad :( , and I want to know so that I can postpone the MQ and do lots of guild quests and exploration etc.

Yes, it really is open ended  You can continue with other quest lines afterwards if you wish.
The only thing I have noticed is that one or two misc quests may not be available any more because the greetings change once it's completed (and the topic to activate the quests doesn't show up), but that was in Tribunal, not the main game. If you play on PC though you should be able to activate and complete all quest lines, using the console if necessary :D

Damn yeh, I'm used to posting in Morrowind cos hardly anyone posts here haha  But I'd still say the same, it's the only instance in the entire series that I had trouble with. I don't know if Daggerfall has anything like that.

Every ES game continues after the MQ. So nothing to worry about.
